One of the most distinctive flavours of Valle d'Itria. Traditionally cured and lightly smoked, Capocollo di Martina Franca reflects centuries of local norcineria and the unique character of this landscape.

FORNELLI PRONTI & BOMBETTE

A Valle d’Itria tradition: choose your meat at a local butcher shop and enjoy it freshly grilled in the adjoining fornello. Bombette, small rolls of seasoned pork, are among the most iconic flavours of the area.

BISCOTTO DI CEGLIE
